Dobbeltskud fjernes, og der tyndes ud i vinstokkene for at give luft til druerne. Vinen spontangærer, og den har lagret som basisvin uden svovl i en kombination af tonneaux og rustfrit stål. Herefter andengæring på flaske og lagring 36 måneder med gærresterne. Degorgeret uden dosage og uden svovl.

    The finely smoky and iodine-inflected 2019 Blanc de Noirs Brut Nature Calcaire opens to a bright, pure and fresh yet nonetheless deep and intense nose, with chalky, lemony and yeasty hazelnut, nougat, brioche, whole-grain bread, grisons meat and red fruit aromas. This is a pure, steel and barrel-fermented Spätburgunder (Pinot Noir) from the calcareous single vineyards Steinacker and Kalkofen in Kallstadt. The base wine underwent the malolactic fermentation, and the final Sekt (which includes 5% of the 2018 harvest) was disgorged without dosage and any addition of sulfur after three years sur lattes in July this year. The 2019 has very attractive autolysis notes, is fully flavored, rich and round on the palate yet also pure, fresh, light and highly finessed. It's saline and yeasty on the long, intense but uplifting and persistently fresh finish with mocha and lemon juice notes. This inaugural Rings Sekt reveals amazing length and textural complexity. In any blind tasting, one could easily guess a "natural" grower Champagne here. This is a stunningly good, beautifully pure, refined and elegant, reasonably priced German sparkling wine that is to be released in March of next year. 2,700 bottles were made. 12% stated alcohol. Natural cork. Tasted at the domaine in November 2023. // Steffen and Andreas Rings have produced not only a splendid series of 2022 Rieslings and 2021 Pinot Noirs but also one of the finest sparkling wines I tasted this year. The 2019 Brut Nature Blanc de Noirs Calcaire won't be released before spring next year, though, unfortunatelyùnot because of the wine itself but because of a shortage of capsulesùbut a preview this late November showed a highly finessed and elegant but intensely flavored Pinot Noir with great precision and balance. When I served this terrific sparkling wine to a small group of sommeliers and wine producers blind a few days ago, guess what they thought they had in front of them? A finest grower Champagne! It would be a pity if you miss this.
